Kris’s Winter Chowder

688532_clam_chowderFirst, sauté the following in a pan:

  • 1/4 cup crumbled bacon
  • 1/4 cup chopped sliced ham
  • 1 tbsp. butter or olive oil
  • 1 large onion diced
  • 1 cup carrots diced sm.
  • 1/2 cup bell peppers diced
  • 4 chicken bullion cubes
  • 1/2 tsp cayenne
  • 1/2 tsp. chili powder
  • 1 tsp. each thyme, sage, pepper

Sauté until onions start to clear, letting some brown.

Then, in large pot (6 quart.), put:

  • 2 celery stalks sliced
  • 2cups green beans
  • 1 cup frozen peas
  • 4 cups water
  • 5 potatoes
  • 2 cups corn

Turn on the pot to low simmer

When sauté’ stuff is done, add it to the stuff in the pot

Then add 2 cups milk. Stir well.

Now stir in:

  • 3 Tbsp. corn starch

Simmer for about an hour.

Blend the following in a blender:

  • 2 cups milk
  • 1 cup sour cream
  • 6 oz cream cheese

Then add this mixture to the soup after flame is off.

Serve and enjoy!

    1. it is soooo not fattening if u use non fat and low fat dairy! and the bacon is the crumbled bacon from costco, so it is low fat as well. and with only a tbsp. of butter and all the veggies, i could eat the whole thing! …as a matter of fact, I almost did! .. 🙂
