Applesauce Bran Muffins

This recipe makes 12 large muffins. Please note that it uses two different kinds of cereal, Kellogg’s 100% Bran Cereal and Kellogg’s All Bran.

1 Cup Kelloggs 100% bran cereal mixed well with 1 cup milk, 1 Egg beaten into mix w/fork, 1/4 cup brown sugar, well packed, and  3 Tbs oil.

When the above ingredients are well mixed, add 1 cup applesauce. Mix. Let stand about 5 minutes to give the bran time to become well soaked.

Sift into the above mixture: 1 cup flour, 4 tsp baking powder, 2/3 tsp salt.

Mix all together very well.   

Oil your muffin pan. Pam is best especially if you have Teflon muffin pans.

Add  1 1/2 cups Kellogg’s All-Bran to the mixture. As soon as it is well mixed (do this quickly so that the All-Bran does not have time to become soaked with the liquid) place into the muffin pans. From now on be gentle.  Let the mix stand in the pans at least 5 minutes to give the All-Bran time to soak. If you forgot to heat the oven to 400 degrees, now is the time to do it.

Bake in 400 degree oven for about 30-35 minutes.

These are even better when they have cooled off a bit, or even cold. They are excellent the next day.  If you want to serve them cold, don’t be hesitant about cooking them the day before you are going to use them.  After they are cold, keep them in a tight, plastic bag.
